Tokbokki rice cakes:

  • 300g store-bought rice cakes (or make your own from 200g rice flour + 50g glutinous rice flour + 250ml warm water)
  • Tip: Soak the dried rice cakes in cold water for 1-2 hours before cooking to ensure they soften evenly.

  • 1 leek (cut diagonally)
  • 1 carrot (shredded, optional)

B. Tokbokki sauce seasoning:

(Flexible substitution with Vietnamese ingredients)

  • 3 tablespoons Korean chili paste (Gochujang) or 2 tbsp Vietnamese chili sauce + 1 tbsp tomato sauce
  • 1 tbsp Korean chili powder (Gochugaru) or Vietnamese chili powder
  • 2 tbsp white sugar
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 cloves of garlic (minced)
  • 300ml chicken broth/water

Part 2: Steps to Follow

Step 1: Prepare the Ingredients

Rice cakes:

Boil the dumplings for 5 minutes in boiling water, then immediately remove and soak them in ice water to make them chewy and prevent sticking.

Lightly fry the fish balls, sausages, and spring rolls until lightly golden; this enhances their flavor when cooking the sauce.

Step 2: Making Tokbokki Sauce

Sauté the garlic until fragrant. with 1 tbsp of cooking oil in a deep pan.

Mix the saucePut it in the pan:

  • 3 tbsp chili paste + 1 tbsp chili powder + 2 tbsp sugar + 1 tbsp soy sauce + 300ml broth
  • Stir well, simmer for 5 minutes until the sauce is smooth and creamy.

Step 3: Cook the Tokbokki

  • Add the rice cakes and Vietnamese-Sin fish cakes/sausages to the sauce and stir gently.
  • Add cabbage, carrots, and leeks.
  • Cook over medium heat for 10-15 minutes. Continue cooking until the sauce thickens and the rice cakes absorb the flavors.
  • Turn off the heat and drizzle 1 tablespoon of sesame oil over the top.

Step 4: Presentation

  • Scoop into a bowl, sprinkle with chopped scallions and roasted sesame seeds.
