Why does it taste bitter? (Understanding to avoid it!)
- Yellowish, rough nails and skin In the creases/heels: the main culprit causing bitterness.
- Not thoroughly soaked and rinsed.Still has a foul odor and impurities.
- Boiling incorrectly: not blanched/ not skimmed/ overcooked.
- Mix the sauce in the wrong proportions.Too much lemon juice, lemon seeds included.

Prepare the ingredients (for 4–5 people)
Chicken feet
- Chicken feet 1kg (preferably large, plump, light yellow-skinned industrial-grade fish).
Boiled ingredients
- 1 large ginger root (crushed), 3–4 stalks of lemongrass (crushed).
- 2 shallots, 1 tablespoon salt, 2 tablespoons vinegar/white wine.
Thai Sauce (basic)
- 10–15 chili peppers, 1 large clove of garlic.
- 6 tablespoons of sugar, 5 tablespoons of fish sauce.
- 4 tablespoons of lemon juice (strain to remove seeds).

The "magical" steps to perform

1) Thorough preparation
- Rinse thoroughly under running water.
- Cut off the nails completely.Scrape off the rough, yellowish skin between the heels/stretch marks.
- Soak in a mixture of salt and vinegar for 15-20 minutes, then rinse thoroughly.
2) Boil until crispy
- Boil them together with ginger, lemongrass, shallots, salt, and vinegar.
